The Three Craft Rum Methods of Helios Distillery

At Helios Distillery, we make three unique types of rum—Traditional, Agricole, and Kokuto (black sugar)—each with its own ingredients and style. By bringing out the best of every ingredient through careful fermentation, distillation, and aging, we create distinct and flavorful rums you won’t find anywhere else.

■ Traditional Method

A method of making rum using molasses, a byproduct removed during the production of sugar from sugarcane. It is characterized by a rich, full-bodied taste and a fragrant sweetness.

■ Agricole Method

A method of making rum using 100% fresh sugarcane juice, extracted directly from the sugarcane. It offers fresh, grassy aromas and the distinctive flavor of sugarcane in its natural form.

■Brown Sugar Method

A production method in which brown sugar is dissolved and then fermented as the main ingredient. This process creates a smooth sweetness, rich body, and the distinctive depth of flavor characteristic of brown sugar.

Aging and Flavor Profiles

Type Barrel Aging Color Characteristics
White Rum Not aged in barrels. Some varieties are filtered through activated carbon. Clear and colorless Light, crisp, and refreshing.
Gold Rum Aged for approximately 3 years. Golden to pale amber Smooth and mellow, with a gentle sweetness.
Dark Rum Aged for 3 years or longer. Deep amber to dark brown Deep, complex aromas and a rich, full-bodied flavor

※ In Gold and Dark rums, compounds from the wood of the barrels infuse into the spirit, creating greater depth and complexity in both aroma and color.
